Need an easy recipe for your Cinco de Mayo celebration ?
This recipe for Salsa Chicken is easy and delicious and can be fixed in 30 minutes or less.
This is a "pass along" recipe and since no measurements were given, I'll just tell you how it's made and you can adjust it to your needs.
Hmmm...It's hard to see the chicken under the salsa, but it's there.
Ok, here goes....
I use boneless, skinless chicken breasts or tenders...as many as you need. This time I used 2 humongus breasts and cut them in half. This would be enough for 2 very hungry people.
You need a jar of your favorite salsa. I just happened to have this brand, so that's what I used.
I guess you could make your own, but who has time for that?
Next, dredge the chicken breasts or tenders in flour with a bit of salt and pepper. Lightly brown in about 2 tablespoons of vegetable or olive oil.
Then pour the salsa over the chicken. The salsa jar I had was 24 oz. and I used about 3/4 of it.
Then put a lid on the skillet.. Cook covered on low or medium low for 20-30 minutes depending on the thickness of the chicken. Check it about half way through to see if you need to add more salsa.
If the chicken is thick, usually I'll check it with a meat thermometer to see that it's 165 deg.
Serve over rice and with a salad, beans or what ever side dish you like.
