I've been cooking along with Paula for a long time.
This is the first cookbook of hers that I bought, and I use it a lot because so many of her recipies are the kind I grew up on and still love.
One of my favorites from this cookbook is Georgia Cracker Salad.
You can see how quick and easy it is to prepare.
There are only five ingredients: saltines, tomato, hard boiled egg, green onions and mayonaise.
Break up the saltines, with your hands into coarse pieces.
Mix chopped tomato, chopped green onions and hard boiled egg. Add mayonaise and...
...serve immediately on a bed of lettuce.
There. Quick and easy and perfect for a Summer day.

ReplyDeleteThat seems so truly southern with the crackers and mayo and egg. It sounds truly intriguing. I know I would love the crunch of the crackers. We are going to have to try it and I am not going to tell anyone what is in it! A whole Paula Deen meal would be fun wouldn't it?

ReplyDeleteI have never heard of this salad before, the combination of ingredients with the saltines sounds interesting! I'm surprised Paula didn't insist on Duke's mayonaise in her recipe :-)

This looks so good served on a bed of lettuce the way you've done. I've made something similar but I've never put the hard boiled egg in it. I will definitely make this soon.

Hi, Babs! My best friend bought me this cookbook when she was in Savannah about a year-and-a-half ago. (I think it was this that jinxed me and why I'm having to move there now!) :-) I saw this recipe for cracker salad. I may have to try it now that I have seen your picture of it. Have a great weekend!
