Instead, I'm pigging out.
Today, I started working on a tablescape, using my newly found PB rooster plates, and ended up making a Tuscan tuna salad instead.
Now, don't let the tuna salad part make you turn up your nose. It's not the tuna and mayonnaise tuna salad.
Most of the time I make it without pasta, and serve it with a few crackers. But this time, I had a pasta craving.
Here's what's in it...
1 can albacore tuna, drained
1 can cannellini beans, drained and rinsed
Sometimes I use leftover cooked green beans instead of the cannellini...less calories. :)
1 can artichoke hearts, quartered, drained and rinsed
1/2 can of pitted ripe olives, drained of course
1/2 box of cooked pasta...sometimes I omit this if I'm watching my carbs.
Oh.. I forgot to show you the other things...
1 chopped tomato, or a handful of cherry tomatoes, halved, if you have those.
1 sliced green onion
and a couple of leaves of basil cut into little strips.
Mix everything together, and add a dressing made of olive oil, red wine vinegar, Italian seasoning and sea salt, in the amounts that you like.
Refrigerate for a little while, or serve right away if you're hungry.
...move over rooster plate...
I need a BIG plate!
Oh, what the heck! I'll start watching my carbs tomorrow.

Hi, Babs! Glad you made it back safe & sound. I'm one of those weird people who still likes the old tuna and Miracle Whip and relish combo for a sandwich, but this could easily take its place for a salad! It looks beautiful, and all of the ingredients are tasty...can't lose! The tablescape you created in spite of yourself is beautiful! I really, really like the natural centerpiece. Way to go! Welcome home!
I eat like this everyday, if that's pigging out...I've lost weight that way, lol!! I love this salad! Now I'm hungry too! I'm glad you made it back all well and fine. Love the rooster plates and yeah, that salad must be eaten in style and you did a great job with your table too. Hugs,

that salad looks delish....might be something good for me to make for the Boss since we have decided to diet again.....sure that will last about a week before we have a DQ craving :)

Babs, I would have a hard time working on a tablescape with that tuna salad made up and in the refrigerator! Love those rooster plates, and the woven place mats are perfect for the season. Great flatware and love those frenchy knives. I'm going to have to try this recipe, look delicious! Look forward to your next post and pics from you trip. I'm already ready for another trip to the beach. I love this time of year……..

I love tuna salad! I've never had it the way you did it. Yours looks delicious. I only buy albacore tuna (like you used) and I love artichoke hearts. Hmmmm....may need to give this recipe a try! Your rooster plates look gorgeous. They look like they're from Vietri!

I will absolutely be trying this salad, probably next week. My daughter and I are on a quest to try as many salads as possible this summer. We both love tuna so we'll try this one when Dad's out of town. it looks yummy.
