Quick Saturday Snack

Hey Y'all...

Here's a snack I made for Hubby this afternoon. 
It's one of his favorites and so easy to make, because I always have cream cheese and veggies in the fridge



Veggie Cream Cheese Spread 

1 8 oz. pkg Neufchatel (low fat) or cream cheese 
1 or 2 green onions, finely chopped
1/4 c. each red and yellow bell pepper, finely diced
1 small carrot, finely diced

While you chop the veggies, let the cream cheese come to room temperature in a mixing bowl.
Add the diced veggies...and mix like crazy with a fork or spoon...I get Hubby to do the mixing. :)  
You can add seasonings if you like, but I normally don't, because the veggies usually have a lot of flavor on their own. 

Put in a serving container and serve with crackers, bagels, etc.
The spread is good on flour tortillas for roll ups, too.

This looks so fresh and yummy. I just heard of another cream cheese dip where all you add is some sort of jelly. That sounded easy too! We had dinner with some cousins last night who are from Atlanta. They said is was pretty hot. Hope you are staying cool!

It's a well known fact of Debbie Land that if something has green onions in it, I'm probably going to love it.

I would probably love this. (But I would serve it with carrots to everyone else and pick the carrots out of mine. I'm still trying to like carrots at age 52.)

This looks like a great thing to prepare when unexpected company drops by. It's always nice to have something easy to make on hand . . . it makes sitting on the front porch more memorable when you have a yummy treat to serve.
